This easy Lazy cake recipe is all you need when craving something chocolaty, sweet, and simple to make. It is a plant-based alternative to “traditional lazy cake” that still delivers on taste and texture. This means you can enjoy a guilt-free, flavorful, and cruelty-free treat.
What is Lazy Cake?
Lazy cake, also known as no-bake cake, refrigerator cake, chocolate biscuit cake, or Marie biscuit cake ……..I know these are a lot of names for this cake 😉 .
It is typically made by mixing a biscuit or cookies with a creamy chocolate sauce/ ganache. The mixture is then chilled in the refrigerator or the freezer, allowing it to set completely, before serving it as a cold dessert.
The great advantage of lazy cake is its simplicity, the few ingredients needed to make it, and the fact there is no “actual baking” required to make it. Also its versatility, you can customize it to suit your taste preferences and dietary needs.
This Vegan Lazy cake recipe is My “Lazy” Vegan version of the famous lazy cake, since am too lazy to make the chocolate sauce/ganache, I usually use 2 ingredients only to make the cake, biscuit, and Nutella.
If you are an even “lazier” person than I am, you can use a vegan store-bought Nutella and make this recipe, However, I do prefer to use homemade Nutella, as it is easy to make, delicious, and healthier than store-bought ones. So I guess am not that of a lazy person after all 😅

Vegan Nutella Ingredients:
To make this Easy Vegan Nutella, you will need 5 ingredients only:
- Hazelnut
- Vegan dark chocolate (76% dark)
- Pink slat
- Hazelnut oil
- Vanilla extract
Vegan lazy cake ingredients:
- Vegan Nutella
- Digestive biscuit/ any Vegan biscuit.
How to make vegan Nutella?
- To begin, you’ll want to roast the hazelnuts for about 10 minutes in a preheated oven at 180°C.
- Meanwhile, go ahead and melt the dark chocolate, either in a microwave or in a bain-marie. Set aside to cool.
- Once the hazelnuts are nicely roasted, allow them to cool slightly before rubbing them together in a clean kitchen towel to remove any loose skin.
- Now, place the skinned hazelnuts into a food processor or Vitamix, and blend for 2 minutes until they turn into a smooth paste.
- Next, add hazelnut oil and blend for another 1 minute.
- Now add the rest of the ingredients, melted dark chocolate, salt, and vanilla, and blend for one minute, until all the ingredients are well combined, and the mixture achieves a creamy consistency.
- Transfer the Vegan Nutella into a glass jar.
How to make a Vegan lazy cake?
- Into a big mixing bowl, break the biscuit into smaller pieces.
- Add 1 cup of the vegan Nutella you prepared earlier and mix till it’s well combined.
- Line a loaf pan with cling film or parchment paper.
- Pour the lazy cake mixture into the pan, and press firmly to create a flat surface cake
- Place the cake mixture in the freezer for 2-3 hours till it sets.
- Take it out of the freezer and place it on the kitchen counter for at least 30 minutes before serving.
- Once ready to serve, remove it from the loaf pan, slice, and enjoy.
Recipe tips and notes:
- Dark chocolate: for this recipe, I have used Vegan dark chocolate (76% dark), that contains coconut sugar. This recipe works well with darker chocolate as well, like 80-90% dark, it won’t be that sweet Nutella, but still delicious if you prefer a more intense chocolate flavor.
- Sugar: since the chocolate contains sugar, It was sweet enough not to add any additional sugar, however, if you decide to go for darker chocolate, or you prefer sweeter Nutella you can add coconut sugar or any sugar you prefer.
- Hazelnut: I prefer to buy raw hazelnuts and roast them in the oven, but you can use a store-bought roasted hazelnut and save time roasting the hazelnuts!
- Blender: I’ve made the Nutella in Vitamix ( honestly the best blender for making any nut butter in a few minutes!), It takes 3-4 minutes to make the creamiest Nutella! However, you can use any high-speed blender or food processor you own/prefer.
- This recipe for vegan Nutella will yield about 2 cups, you can double or triple the recipe and make more Nutella, I mean who would complain of having more Homemade Nutella ready to be enjoyed 😉
Serving Lazy Cake?
You can serve it on its own, and enjoy it with a cup of green tea, espresso, or juice.
If you’re feeling fancy, consider adding a dollop of vegan whipped cream or a sprinkle of powdered sugar on top of each slice.
If you prefer a lighter touch, a side of fresh seasonal fruits or a dusting of cocoa powder can be a refreshing compliment to the cake.
What to do with leftovers?
If you find yourself with leftover cake, do not worry, you can easily store it in the fridge and it will last for days and you can still enjoy a delicious Vegan treat, just follow these simple steps:
- Transfer any leftovers into an air-tight container and place it in the fridge, it will last for 5-6 days.
- If you wish to freeze the cake, you can do so by wrapping the cake with cling film or aluminum foil and storing it in the freezer it will last up to 2 months. Before serving, thaw the cake in the refrigerator overnight.
