Vegan Lazy Cake recipe

Ingredients
  

Vegan Nutella Ingredients:

  • 3 cups hazelnuts raw
  • 170 g 76% vegan dark chocolate
  • 1 tsp hazelnut oil
  • pinch pink salt
  • 1 tsp vanilla extract

Lazy Cake Ingredients:

  • 200 g digestive biscuit Vegan
  • 1 cup Vegan Nutella

Instructions for making vegan Nutella:

  • Preheat your oven to 180°C. Add hazelnut to a baking tray and roast in the oven for 10 minutes.
  • Melt the dark chocolate, either in a microwave or in a bain-marie. Set aside to cool slightly at room temperature.
  • Once the hazelnuts are nicely roasted, allow them to cool slightly before rubbing them together in a clean kitchen towel to remove any loose skin
  • Place the skinned hazelnuts into a food processor or Vitamix, and blend for 2 minutes until they turn into a smooth paste.
  • Next, add hazelnut oil and blend for another 1 minute.Now add the rest of the ingredients, melted dark chocolate, salt, and vanilla, and blend for one minute, until all the ingredients are well combined, and the mixture achieves a creamy consistency.Transfer the Vegan Nutella into a glass jar.

Instructions for making a lazy cake:

  • Into a big mixing bowl, break the biscuit into smaller pieces.
  • Add 1 cup of the vegan Nutella you prepared earlier and mix till it's well combined
  • Line a loaf pan with cling film or parchment paper. Pour the lazy cake mixture into the pan, and press firmly to create a flat surface cake.
  • Place the cake mixture in the freezer for 2-3 hours till it sets. Take it out of the freezer and place it on the kitchen counter for at least 30 minutes before serving. Once ready to serve, remove it from the loaf pan, slice it, and enjoy.
