These easy-to-make energy balls are packed with Middle Eastern flavors—they are nutritious and tasty! If you are craving a quick snack, this recipe is for you. All you need is dates, pistachios, walnuts, tahini, and sesame seeds, and you get a guilt-free, healthy vegan snack!
What are energy balls?
Energy balls are nutrient-packed snacks that taste like dessert and are packed in a ball shape. They mainly contain dried fruits (usually dates), nuts/seeds, and nut/seed butter, and other ingredients are added, too.
They are plant-based snacks that are quick to make and versatile. You can mix in any nuts or seeds to create a healthy vegan snack that is ready in 10 minutes.
They are perfect for:
- Those who are always on the go and looking for healthy snacks.
- School lunch boxes: my kid loves her energy balls; it’s her favorite snack.
- Pre or post-workout snacks
- Mid-day snack for an energy boost.
Recipe Ingredients:
- Dates: After trying many types of dates to make energy balls, I can confidently tell you that Medjool dates are the best. They are moist, soft, and meaty and honestly taste like caramel. Other dates can be used, but they tend to be drier, so you need to moisten them first.
- Nuts: I have used classical Middle Eastern nuts mix, Pistachios, and walnuts. You can substitute it with almonds or any other nuts you prefer.
- Tahini
- Sesame seeds are used to roll the balls and coat them.
- Pink Salt: you can use sea salt instead but don’t skip it, it added saltiness.
Storing:
You can easily store them in a glass Tupperware in the fridge for up to a week (if you can resist the temptation that long ). They also freeze well in the freezer. I never freeze them as they are pretty easy to make, and we prefer them fresh, too.

Energy Balls Recipe
Equipment
- Food processor
Ingredients
- 1 cup Medjool dates pitted
- ½ cup pistachios
- ½ cup walnut
- 1 tbsp tahini
- 3 tbsp toasted sesame seeds Optional
- pink salt sprinkle
Instructions
- To a food processor add the pistachios and walnut and process them until are almost ground. The texture should be fine-coarse and set them aside.
- Next add the pitted dates to the empty food processor, and blitz until chopped then add the processed nuts, Tahini, and pink salt and blitz it until everything comes together.
- Take some in your hand and press, it should come together like a dough, if it's too dry, add more tahini, and if too wet or sticky add more nuts.
- Take around 1.5 Tbsp of the mixture in your palm and roll it into a ball.
- Finally, roll the ball in the toasted sesame seeds to coat the ball, and it's ready to enjoy.
