To a food processor add the pistachios and walnut and process them until are almost ground. The texture should be fine-coarse and set them aside.
Next add the pitted dates to the empty food processor, and blitz until chopped then add the processed nuts, Tahini, and pink salt and blitz it until everything comes together.
Take some in your hand and press, it should come together like a dough, if it's too dry, add more tahini, and if too wet or sticky add more nuts.
Take around 1.5 Tbsp of the mixture in your palm and roll it into a ball.
Finally, roll the ball in the toasted sesame seeds to coat the ball, and it's ready to enjoy.
