This creamy and refreshing cucumber salad is easy to prepare, healthy & super delicious. Made with an addictive combination of cucumbers, fresh herbs, onion, radishes & the perfect vegan creamy dressing!

Cucumber salad is the perfect side dish to many meals, for all seasons, but especially in the summer!
Cucumber Salad Ingredients:

- Persian cucumbers: I used Persian cucumbers because they are my favorite; they are crunchy and delicious. However, you can use English cucumbers instead.
- Red onion is the best type of onion to use in this salad
- Radishes, red and crunchy radishes, are perfect in this salad.
- Dill, preferably use fresh dill
- Parsley preferred fresh rather than dry
- Mint: can be substituted with dry mint instead
- lime juice and zest
- Garlic
- Mayonnaise
- Greek yogurt
- Dijon mustard
- Olive oil
- Zaatar
- Salt and pepper
How To Make Cucumber Salad?
- Cut cucumbers, radishes, and red onion into thin slices (use a Mandolin for quick cutting).
- Chop fresh herbs, dill, parsley, and mint leaves.
- Mix the dressing ingredients.
- Add the dressing to the veggies and herbs.
- Mix to combine, and cucumber salad is ready!
Serving Suggestions:
This refreshing and cooling salad can be served as a side dish with a variety of dishes. Serve it alongside a spicy Biryani dish, or with this delicious Arabic Chickpea Rice.
Storing leftovers:
This cucumber salad can be stored in the fridge for a couple of hours only. It tastes even better as a chilled salad. However won’t last more than that, especially with the dressing. If you prepare a large quantity, store the dressing separately from the salad.

- 8 Persian cucumbers small
- 1 radish large
- 1 red onion
- ½ cup dill chopped
- ⅓ cup parsley chopped
- ¼ mint leaves minced
- ⅓ cup mayonnaise
- ¾ cup Coconut Greek yogurt
- 1 clove garlic minced
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 lime zest & juice
- 2 tbsp Zaatar mix optional
- 1 tsp pink salt
- 1 pinch black pepper
Instructions
- Cut cucumbers, radishes, and red onion into thin slices (use a Mandolin for quick cutting).
- Add the chopped herbs to the veggies.
- Mix the dressing ingredients.
- Add the dressing to the veggies and herbs.
- Mix to combine, and cucumber salad is ready to serve!
