Ingredients
  

  • 8 Persian cucumbers small
  • 1 radish large
  • 1 red onion
  • ½ cup dill chopped
  • cup parsley chopped
  • ¼ mint leaves minced
  • cup mayonnaise
  • ¾ cup Coconut Greek yogurt
  • 1 clove garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 lime zest & juice
  • 2 tbsp Zaatar mix optional
  • 1 tsp pink salt
  • 1 pinch black pepper

Instructions
 

  • Cut cucumbers, radishes, and red onion into thin slices (use a Mandolin for quick cutting).
  • Add the chopped herbs to the veggies.
  • Mix the dressing ingredients.
  • Add the dressing to the veggies and herbs.
  • Mix to combine, and cucumber salad is ready to serve!
