8 Persian cucumbers small 1 radish large 1 red onion ½ cup dill chopped ⅓ cup parsley chopped ¼ mint leaves minced ⅓ cup mayonnaise ¾ cup Coconut Greek yogurt 1 clove garlic minced 1 tbsp Dijon mustard 1 tbsp olive oil 1 lime zest & juice 2 tbsp Zaatar mix optional 1 tsp pink salt 1 pinch black pepper
Cut cucumbers, radishes, and red onion into thin slices (use a Mandolin for quick cutting).
Add the chopped herbs to the veggies.
Mix the dressing ingredients.
Add the dressing to the veggies and herbs.
Mix to combine, and cucumber salad is ready to serve!
