This vegan Avocado Egg Salad Recipe is a plant-based alternative to the popular avocado egg salad. From the creamy texture of avocado to the protein-packed tofu, you will be amazed at how easy and delicious this avocado egg-less recipe is to make!

Ingredients:
- Avocado: I used creamy Hass avocados for this recipe. You can use any avocado you have available.
- Tofu egg: I used this tofu egg recipe to make the vegan egg.
- Green Onion
- Coriander
- Vegan Mayo
- Mustard
- Nutritional yeast
- Salt & pepper
- Lemon juice
- Gluten-free Bun for serving or serve it with Romaine lettuce!
- Olive oil for cooking the tofu
How To Make The Avocado Egg Salad?

- Spray olive oil in a non-stick pan and cook the tofu for 5 minutes.
- Add the tofu egg, avocado, coriander, green onion, nutritional yeast, mayo, mustard, lemon juice, salt, and pepper to a bowl.
- Using a fork, mash & mix everything.
- Toast the bun and top it with the salad.
- Ready to be served.
Serving Suggestions:
This avocado egg salad recipe can be enjoyed in many ways. The best way to serve it is as a sandwich, on toasted sourdough or buns.

The salad can be served with lettuce or as it is.
Storing leftovers:
Store any leftovers in a glass container in the fridge. The avocado can change color. It may turn brown. Therefore, add it only when you want to eat the salad.

- olive oil
- 2 slices Tofu egg
- ½ avocado
- 1 tablespoon coriander minced
- 1 green onion chopped
- 1 teaspoon nutritional yeast
- 1 tablespoon vegan mayo
- 1 teaspoon mustard
- 1 teaspoon lemon juice
- salt & pepper to taste
- 1 toasted bun
Instructions
- Spray olive oil in a non-stick pan and cook the tofu for 5 minutes.

- Using a fork mash & mix everything
