- olive oil
- 2 slices Tofu egg
- ½ avocado
- 1 tablespoon coriander minced
- 1 green onion chopped
- 1 teaspoon nutritional yeast
- 1 tablespoon vegan mayo
- 1 teaspoon mustard
- 1 teaspoon lemon juice
- salt & pepper to taste
- 1 toasted bun
Spray olive oil in a non-stick pan and cook the tofu for 5 minutes.
Add the tofu egg, avocado, coriander, green onion, nutritional yeast, mayo, mustard, lemon juice, salt, and pepper to a bowl
Using a fork mash & mix everything
Toast the bun and add the salad to it, enjoy!
