Ingredients
  

  • olive oil
  • 2 slices Tofu egg
  • ½ avocado
  • 1 tablespoon coriander minced
  • 1 green onion chopped
  • 1 teaspoon nutritional yeast
  • 1 tablespoon vegan mayo
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
  • salt & pepper to taste
  • 1 toasted bun

Instructions
 

  • Spray olive oil in a non-stick pan and cook the tofu for 5 minutes.
  • Add the tofu egg, avocado, coriander, green onion, nutritional yeast, mayo, mustard, lemon juice, salt, and pepper to a bowl
  • Using a fork mash & mix everything
  • Toast the bun and add the salad to it, enjoy!
