Whoever said vegans couldn’t enjoy delicious, cheesy nachos clearly hasn’t tried this Vegan Nachos recipe! Whether you are a plant-based eater or not, these vegan nachos will win your taste buds and heart!

This post is all about how to make the best Vegan nachos. This popular appetizer, snack, or quick lunch or dinner is easy to make and great for sharing!
Ingredients:

- Vegan mince: use store-bought vegan mince or homemade, like this recipe.
- Vegan nachos cheese sauce: the main ingredient in any nachos recipe.
- White onion
- Garlic
- Red beans: canned or homemade cooked beans. Alternatively you can use black beans.
- Tomato paste
- Lebanese spice blend
- Chipotle pepper.
- Salt & pepper
- Olive oil
- Tomato Salsa: homemade salsa is easy to prep and tastes delicious with nachos.
- Avocado
- Coriander
- Nacho chips/ Tortilla chips.
How to make nachos:
- Heat olive oil in a pan, then add the minced onion to saute for 2 minutes.
- Add the vegan mince and saute for 2-3 minutes, then add the minced garlic and mix for another 2-3 minutes.
- Then add tomato paste, spices, salt & pepper and mix for 5 minutes.
- Place in the cooked beans and freshly chopped coriander and mix to combine.
- Make the tomato salsa by combining the chopped tomatoes, white onion, coriander, lemon juice, olive oil, salt and pepper.
- To assemble the nachos, start by layering the nacho chips. Then, add the vegan mince and beans mix. Pour over the nacho cheese sauce. Add tomato salsa and avocados. Finally, garnish with chopped coriander.

Leftovers:
If you prepare a big batch, it is best to store each ingredient separately. Once you assemble the nachos and store them, they will be soggy, and no one likes soggy nacho chips.
The cheese and vegan mince can be prepared in advance. They can be stored in the fridge for several days.

- 1 tablespoon tomato paste
- 1 teaspoon Lebanese spice blend

- 85 g Cooked red beans
- 1 tablespoon chopped fresh coriander
- 1 cup Vegan nacho cheese sauce
- Avocado for serving

Tomato salsa Ingredients:
- 1 big tomato chopped
- ½ white onion chopped
- ⅓ cup fresh coriander chopped
- 1 lemon juice
- 1 teaspoon olive oil
- salt & pepper
