Vegan Nachos Recipe
This delicious Nachos recipe is quick, simple and packed with plant-based protein. It is dairy-free with homemade vegan nacho cheese. It is great for gatherings as appetizer or snacks!

- 2 tablespoon olive oil
- ½ white onion chopped
- 315 g vegan mince store-bought
- 1 garlic clove minced
- 1 tablespoon tomato paste
- 1 teaspoon Lebanese spice blend
- ½ teaspoon Chipotle pepper
- salt & pepper to taste
- 85 g Cooked red beans
- 1 tablespoon chopped fresh coriander
- 1 cup Vegan nacho cheese sauce
- Avocado for serving
- Nacho / tortilla chips for serving
Tomato salsa Ingredients:
- 1 big tomato chopped
- ½ white onion chopped
- ⅓ cup fresh coriander chopped
- 1 lemon juice
- 1 teaspoon olive oil
- salt & pepper
Heat olive oil in a pan, then add the minced onion to saute for 2 minutes.
Add the vegan mince and saute for 2-3 minutes, then add the minced garlic and mix for another 2-3 minutes.
Then add tomato paste, spices, salt & pepper and mix for 5 minutes.Place in the cooked beans and freshly chopped coriander and mix to combine.
Make the tomato salsa by combining the chopped tomatoes, white onion, coriander, lemon juice, olive oil, salt and pepper.
To assemble the nachos, start by layering the nacho chips. Then, add the vegan mince and beans mix. Pour over the nacho cheese sauce. Add tomato salsa and avocados. Finally, garnish with chopped coriander.
