Tofu egg Ingredients:
- Tofu: Extra firm tofu is best for this recipe.
- Plant-based milk: I have used soy milk, but any vegan milk works.
- Turmeric powder is essential to give the tofu a yellowish color.
- Black salt: “kala namak” gives any vegan egg recipe its egg taste and smell. It has a scent that resembles cooked eggs due to its Sulfur content.
- Smoked paprika
- Nutritional yeast
- Olive oil
- Salt & pepper
How to make a Tofu Egg Sandwich?
- Preparing the Tofu:
- Cut the tofu block into half, and each half cut it length-wise, so you end up with four equal size slices of tofu
- To prepare the tofu “egg,” marinate: add soy milk, black salt, turmeric, smoked paprika, nutritional yeast, olive oil, salt, and pepper in a small bowl. Mix well to combine.
- In a glass container with a lid, add some marinating liquid first, place the tofu slices, add the remaining liquid, and thoroughly coat all the slices with the marinating.
- Close the lid, shake it gently to coat the tofu properly, and place it in the fridge.
- Let the tofu marinate for a minimum of 2 hours, preferably overnight.
2. Cooking the tofu egg:
- Heat olive oil in a pan, place the tofu slices and cook on each side for 5 minutes.
3. Assembling the Sandwich:
- While the tofu is cooking, toast your buns to your desired level of crispiness.
