Ingredients
  

  • 439 g extra firm tofu
  • ½ cup soy milk
  • 1 teaspoon black salt
  • 1 teaspoon turmeric
  • ½ teaspoon smoked paprika
  • 2 tablespoon nutritional yeast
  • 2 tablespoon olive oil for the tofu marinate
  • ½ teaspoon pink salt
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil For cooking the tofu
  • 4 buns

Optional toppings:

  • Vegan mayo
  • mustard
  • Vegan cheese

Instructions
 

Preparing the Tofu:

  • Cut the tofu block into half, and each half cut it length-wise, so you end up with four equal size slices of tofu.
  • To prepare the tofu "egg," marinate: add soy milk, black salt, turmeric, smoked paprika, nutritional yeast, olive oil, salt, and pepper in a small bowl. Mix well to combine
  • In a glass container with a lid, add some marinating liquid, place the tofu slices, add the remaining liquid, and thoroughly coat all the slices with the marinating
  • Close the lid, shake it gently to coat the tofu properly, and place it in the fridge.Let the tofu marinate for a minimum of 2 hours, preferably overnight.

Cooking the Tofu egg:

  • Heat olive oil in a pan, place the tofu slices and cook on each side for 5 minutes.

Assembling the Tofu egg sandwich:

  • While the tofu is cooking, toast your buns to your desired level of crispiness
  • It's time to assemble your sandwich. Start by layering your toppings, condiments, or vegan cheese.
  • Finally, place the other slice of toasted bread on top to complete your tofu egg sandwich masterpiece. Serve and enjoy!
