This healthy apple pie oatmeal recipe is perfect for the fall season. It is a great recipe to use apples when they are in season.
Delicious, naturally sweetened, apple pie flavors-inspired oatmeal recipe for breakfast or dessert!
Apple pie oatmeal ingredients:
- Oats: I have used old-fashioned rolled oats in this recipe. However, you can use any oats.
- Red apples: you can use any apples to make this recipe; I have used red crisp apples.
- Coconut milk: or any plant milk.
- Dates: Medjool dates or any other dates.
- Coconut butter is used to cook the apples in this recipe. Instead, you can use any vegan butter.
- lemon juice
- Coconut sugar or maple syrup
- Spices: cinnamon and cardamom
- Pecan nuts; optional
How to make apple pie oatmeal:
- Peel two red apples, core, and chop them into cubes.
- Add milk, half-peeled and chopped red apples, cinnamon, cardamom, and dates to a blender. Blend and set aside.
- Add rolled oats to a heated pan and pour the blended ingredients.
- On medium-high heat, stir and cook the oats till they are fully cooked, for around ten minutes.
- Add coconut butter to a preheated pan and the remaining one-and-a-half peeled and chopped red apples to cook the apples.
- Add cinnamon and saute the apples for a few minutes; add coconut sugar and mix well.
- Add a squeeze of lemon juice, then a splash of water to deglaze the pan.
- Continue to cook the apples till they are caramelized. It will take around five minutes to cook them.
- Serve the oatmeal in bowls and top it with the caramelized apples. You can also add chopped or whole pecan nuts.

Storing leftovers:
Any leftover oatmeal should be stored in a sealed glass container in the refrigerator for up to four days.
To reheat, add a splash of water or milk and heat on the stovetop for five minutes.

- 2 Medjool dates

- 1½ tablespoon coconut sugar
