Peel two red apples, core, and chop them into cubes.
Add milk, half-peeled and chopped red apples, 1 teaspoon cinnamon, cardamom, and dates to a blender. Set aside
Add rolled oats to a heated pan and pour the blended ingredients. On medium-high heat, stir and cook the oats till they are fully cooked, for around ten minutes.
Add coconut butter to a preheated pan and the remaining one-and-a-half peeled and chopped red apples to cook the apples.
Add one teaspoon of cinnamon and saute the apples for a few minutes. Add coconut sugar, and mix well. Add a squeeze of lemon juice, then a splash of water to deglaze the pan.
Continue to cook the apples till they are caramelized. It will take around five minutes to cook them.
Serve the oatmeal in bowls and top it with the caramelized apples. You can also add chopped or whole pecan nuts.
