This salad consists of fresh, crunchy cucumbers, tomatoes, and parsley topped with a tangy, creamy tahini dressing. It can be served with any dish or as a standalone healthy light salad with crispy pita bread to scoop up this delicious creamy tahini dressing.
Ingredients:
- Cucumbers: I love Persian cucumbers, which are perfectly crunchy. You can also use English cucumbers.
- Tomatoes: Roma tomatoes work well; choose the big tomato varieties and chop them into small pieces.
- Fresh parsley is the “classic” herb used in any tahini salad recipe, but mint can be used instead, and I even add it to this salad sometimes.
- Tahini: You will need tahini to prepare a tahini dressing! Pick authentic Middle Eastern tahini that is smooth and creamy, not thick and pasty.
- Lemon: freshly squeezed lemon juice.
- Garlic: Freshly minced garlic cloves are always the preferred choice; however, garlic powder can be substituted.
- Water: to thin the tahini dressing, add some water.
- Salt & pepper.
