- 2 Persian cucumbers
- 1 big tomato
- ½ cup chopped parsley
- ⅓ cup tahini
- 1 clove garlic
- ¼ cup lemon juice
- salt & pepper to taste
- ¼ cup water
Dice cucumbers and tomatoes and finely chop fresh parsley.
To prepare the tahini dressing, mix tahini, minced garlic, and lemon juice. Add water to thin the dressing until it reaches the desired consistency
Add the dressing to the veggies and mix well to combine. Serve and enjoy.
