Ingredients
  

  • 2 Persian cucumbers
  • 1 big tomato
  • ½ cup chopped parsley
  • cup tahini
  • 1 clove garlic
  • ¼ cup lemon juice
  • salt & pepper to taste
  • ¼ cup water

Instructions
 

  • Dice cucumbers and tomatoes and finely chop fresh parsley.
  • To prepare the tahini dressing, mix tahini, minced garlic, and lemon juice. Add water to thin the dressing until it reaches the desired consistency
  • Add the dressing to the veggies and mix well to combine. Serve and enjoy.
