Ingredients
  

  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup hemp seeds
  • 1 cup pitted Medjool dates
  • 1 tablespoon ground flaxseeds
  • 1 tablespoon sesame seeds
  • ½ tablespoon cacao powder
  • 1 pinch pink salt

Instructions
 

  • Add sunflower, pumpkin, and hemp seeds to the food processor and pulse until they become coarse or chunky powder.
  • Next, add the pitted dates, flaxseed powder,sesame seeds, cacao powder, and a pinch of pink salt and blend on high until a thick dough is formed and feels "sticky" in your hands.
  • Scoop a tablespoon or two, depending on how big you want to form the balls, and roll them in your hands to form a ball. Line a tray with a baking sheet and place all the balls on the parchment paper. Place the tray in the fridge so the balls can be set for an hour
  • Once the energy balls are set, you can enjoy them like this, or roll them in hemp or sesame seeds.
