Preheat the oven to 200℃. Prepare a baking dish and brush some olive oil.
Add all the sliced veggies (potatoes, tomatoes, onions, and pepper) in a big bowl. add olive oil.
Add all of the spices, salt and pepper and mix well to combine and coat the veggies well with the spice mix.
Place the potatoes first in the baking dish. Bake in the oven for 15 minutes first.
Then, add the other veggies to the potatoes and return them to the oven. Bake for another 15 minutes.
While the veggies are baking, prep the kofta.
Place the vegan mince in a bowl. Add the minced onion, parsley and garlic.
Add olive oil and all the spices, salt and pepper. Mix with your hand to combine.
Using your hand, form a portion of the kofta mix into a disc shape.
Once the veggies are cooked, add the kofta to the veggies. Drizlle some olive oil on the kofta. Place the baking tray back in to the oven. Bake for 10-15 minutes. until the kofta is cooked.
While the kofta is cooking, prepare the tahini sauce.
Into a bowl, add the tahini sauce ingredients and mix well to combine.
Take the kofta tray from the oven and add the liquid from the cooked kofta and veggies to the tahini sauce. Mix well and pour the tahini sauce on top of the kofta.
Place the kofta back into the oven and bake for 5-7 minutes.
Garnish the kofta with toasted nuts and chopped parsley. Serve with bread or vermicelli rice.
