This Arabic salad recipe is one of the easiest yet versatile salads in the Arab world and Middle East! Few ingredients are required, and it’s fresh and complements any dish!
Recipe Ingredients and Notes:
Here is what you will need for my version of the Arabic salad:
- Cucumbers: Persian cucumbers (if available) are preferred for this salad; they are crispier than English cucumbers.
- Tomatoes: Use large, meaty tomatoes. I believe they’re called Red Beefsteak Tomatoes, and I’ve used that tomato to make this salad.
- Parsley: Use fresh chopped parsley. If it’s difficult to find fresh parsley, you can use dried parsley, but it won’t be the same as using fresh in this salad.
- Red Onion: green onion can be used instead of red onion.
- Radishes: use the small red radish.
- Salad dressing: This is a classic Arabic salad dressing made with olive oil, freshly squeezed lemon juice, sumac, dry mint, salt, and pepper.
How to make the salad?
- Chop all the vegetables and add them to a bowl.
- Mix the dressing ingredients in a small bowl.
- Add the dressing to the salad and mix well.
There you go, the most straightforward salad in just 10 minutes.
Serving suggestion:
This salad can be served with any meal, whether meat or vegetable. It can also be served with rice dishes like Mujadara, simple Vermicelli rice, fava bean rice, or authentic Iraqi carrot rice.
Storing Leftovers:
Any leftover salad can be stored in the refrigerator; however, it is best to be prepped and consumed fresh, as the veggies tend to get soggy if left with the dressing. You can store the salad and dressing separately for a couple of days in the refrigerator.

- 3 Persian cucumbers chopped
- 1 tomato Large, chopped
- 3 radish small, chopped
- ¼ cup parsley chopped
- ¼ red onion finely chopped
Dressing ingredients
- 1 lemon juiced
- 2 tablespoon olive oil
